FiTONIC Blissed Gluten-Free Chocolate Protein Brownies With Mint Icing
That's right. Brownies. We don't brownie often, but when we do, we want the best ingredients and macronutrients we can find! These lovelies give us all the yummies while still being better a better-for-you kinda brownie. They are definitely a treat, but eating well includes eating a well-timed treat. So ready to get minty? Here's how:
- 2 scoops FiTONIC Blissed protein blend in Natural Cacao
- 1/2 c. cocoa powder
- 3/4 c. sugar or your favorite sweetener
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 egg
- 1/2 c. coconut oil (plus some for greasing the pan)
- 1/2 c. unsweetened applesauce
- 1/2 c. coffee (decaf works too!)
- dark chocolate chunks or nuts (optional)
- 1 large avocado
- 1 banana
- 1/2 c. butter
- 1/4 c. coconut oil
- 1 T vanilla extract
- 2 T fresh mint leaves
- 1 handful spinach
- 1 T water
- chocolate slivers or mini chips (to top, optional)
Bake brownies first. Preheat oven to 325 F. Grease an 8-inch pan with coconut oil or line with parchment paper. Combine all brownie ingredients in a bowl and stir until smooth. (Sometimes bananas don't smooth perfectly. If you don't get every little banana lump smoothed, they should bake out.) Spread into pan. Lick the bowl. Bake on the center rack for 20-25 minutes or until a toothpick comes out clean. They might be a little undercooked when they come out, but let them cool overnight for maximum fudginess.
Once brownies have cooled, assuming that you didn't eat them all before then, prepare to spread the mint frosting. Place all the frosting ingredients into a blender or food processor and mix. Spread frosting and top with some tiny chocolate chips, if you like. Enjoy!
